Ingredients

  • 2 cups all purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon kosher salt
  • 1/4 cup cold salted whipped butterdivided
  • 1 cup 0% fat Greek Yogurt
  • 4 cloves minced or grated garlicdivided
  • 2 ounces shredded part-skim cheddar cheese
  • olive oil spray
  • 2 tablespoons finely chopped parsley

Instructions

1- Preheat your oven to 375°F and position the rack in the top third of the oven. Line a sheet pan with a silicone mat for optimal results.


2- In a large bowl, combine the dry ingredients using a fork. Cut in 2 tablespoons of butter using a pastry knife for best results, or use two forks if a pastry knife isn't available, until the butter is no longer visible.


3- Add the yogurt, cheddar cheese, and half of the minced garlic to the bowl, and mix everything together using a fork.


4- Next, using your hands, knead the dough at least 20 times until it holds together and becomes tacky and smooth. Shape the dough into a flat ball and divide it into 8 equal pieces. Roll each piece into a ball and place them on the prepared baking sheet, flattening them slightly to about 1/2 inch thick.


5- Lightly spray the biscuits with oil and bake them on the top rack of the oven for about 20 to 24 minutes, or until they turn golden brown. There's no need to turn them while baking. Once baked, allow the biscuits to rest for 10 minutes.


6- While the biscuits are resting, melt the remaining butter in a small frying pan.

Add the remaining minced garlic and sauté over low heat for about 1 minute until fragrant. When the biscuits are ready, brush them with the melted garlic butter and sprinkle with chopped parsley before serving.

Feel free to adjust the recipe to your needs; you can halve, double, or even triple it as necessary.

When you initially begin kneading the dough, it may appear dry. However, as you continue to knead it, it will eventually come together into a large ball. At this stage, it should feel slightly tacky to the touch, indicating that you've kneaded it enough.
