Air Fryer Chicken Breast Bites

These straightforward naked Air Fryer Chicken Bites, free from any breading, showcase boneless chicken breast chunks seasoned with Italian dressing, dried herbs, and spices. I like to consider them as more mature chicken nuggets, and they're incredibly versatile! I air fry them for dinner and save the other batch for lunches throughout the week. Using my air fryer for cooking chicken breasts is a favorite of mine! What I particularly appreciate about this air fryer chicken breast recipe is its speediness compared to my brined Air Fryer Chicken Breast recipe, as there's no need to marinate the chicken for very long. Some other beloved chicken breast dishes include Air Fryer Chicken Parmesan and my personal favorite, the Air Fryer Chicken Sandwich.

Air Fryer Chicken Bites Ingredients

  • Chicken: Cut boneless, skinless chicken breasts into 1-inch cubes.
  • Italian Dressing: Use your favorite brand or make homemade Italian dressing for marinating the chicken.
  • Adobo Seasoning: Adobo is a Latin spice blend made from onion and garlic powders, salt, pepper, and other spices.
  • Italian Herbs: If you don’t have Italian seasoning, you can substitute with any dried herbs such as oregano, basil, and parsley.
  • Salt to season the chicken.
  • Sazon seasoning includes coriander, cumin, annatto, garlic powder, salt, oregano, and pepper. It's optional but adds delicious flavor if you choose to use it. You can find it at the supermarket or make your own at home.

How to Make Boneless Chicken Bites in the Air Fryer:
1. Season the Chicken: Mix the chicken with the Italian dressing, adobo seasoning, dried herbs, salt, and sazon if desired.
2. Air Frying Time: Arrange the chicken in an even layer in the air fryer basket. Cook at 400°F for 12 minutes, shaking the basket halfway through. The chicken bites are done when they are browned and cooked through.

What to Serve with Chicken Bites: These easy chicken bites are adaptable and pair well with a variety of sides.
  • Main Dish: Accompany the chicken with rice, beans, or sweet potatoes alongside a green salad, Brussels sprouts, or green bean
  • Tacos: Wrap the chicken in tortillas and garnish with salsa and cheese.
  • Bowls: Create a grain bowl with chicken, veggies, and a fried egg, then drizzle with additional Italian dressing.
  • Salads: Add the chicken to any salad to boost the protein content.

How to Meal Prep Chicken Bites: Leftover chicken bites can be stored in an airtight container in the refrigerator for up to four days. Reheat them in the air fryer or microwave for quick lunches throughout the week.

You can also freeze cooked chicken bites:

  1. Allow the chicken to cool, then flash-freeze the chunks on a sheet pan.
  2. Once frozen, transfer them to a freezer-safe container or bag and store for up to three months.
  3. When ready to eat, either thaw them in the refrigerator overnight or heat them from frozen in the air fryer at 350°F for about five minutes, shaking the basket halfway through.
